The
food... not the dude...
I recently
wanted to make a meatloaf..... I'd actually only ever had a store bought
one at Grandma's (which seemed to be topped with burned sawdust..and wasn't
very nice at all)... I know a lot of people hate them, but after
searching for recipes online it seems a lot of people like them... so I
had a go at making one.. We liked it, so I will make it again.

You can't
microwave cook it, I microwaved it to reheat it the following night (since
there are 2 of us, so it did 2 night's dinners)... I guess you could freeze
it (I'd freeze it in slices to make it easier to defrost).
Ingredients:
500g
beef mince
2 stale
bread slices - broken up into breadcrumbs
half
a zucchini (grated)
a carrot
(grated)
Salt
and pepper
1 egg
herbs
and spices (I used corriander, cumin, cardamon, curry powder (a smidge)
and some mixed herbs)
a dash
of sweet chilli sauce
about
1/2 a teaspoon of wholeseed mustard
1 clove
garlic (finely diced)
a small
onion (finely diced)
glaze:
tomato
sauce
sugar
I meant
to put tomato paste, peas and corn in, but I forgot to.... I was trying
for something cheap.... but if you aren't on a budget then I'd add spring
onion, mushrooms......maybe some cheese (parmesan for the kick and cheddar
for the creamyness)...

Method:
1).
Brown the onion and garlic. Then bung all the ingredients in a bowl
(minus the glaze ingredients).. you might want to crack the egg first ;)
(the shell bits get stuck in your teeth).
2).
Mix together...
3).
Line a loaf tin with aluminium foil and pour the mix in... flatten the
top down and pack it in hard. Cover the top with foil and bake it
for 1 hour. (You might want to put a tray under the loaf tin if yout
tin is full.. mine dripped)
4).
After an hour, take the meatloaf out and place it on a rack ontop of a
tray. Mix together the glaze ingredients and coat the meatloaf with
this. Pop it back in the oven until this goes dark brown (15 mins
or so?).
I served
mine sliced with mashed potato and other vegies....
