A
Meat pie with no pastry and a potato top.
Serves:
4
Freeze?
Microwave?:
Yes you
can freeze it, you could microwave it to cook it I guess...
Ingredients:
Potato
(About 4 large ones... it depends on how much potato you like
Mince
(about 500g should do)
Gravy
Powder
Vegies
(Peas, Corn, Carrot, Broccoli etc. Anything else you want)
Mushroom
(Optional)
Garlic
(Optional)
Onion
(Optional)
Cheese
(I used Mozzarella because it is what I had {and lower in fat})
2-3 slices
of bread (depending on how large your dish is)
Parmesan
cheese (optional)
Handfull
of rice (uncooked)
Herbs
and Spices
Corn
Flour (Optional)
Tomato
Paste
Preparation
time:
About
20 mins to make the pie and another 15-20 mins to bake it (although you
could skip that if you wanted to, or grill it to make it quicker)
Oven
Temp:
About
180C
Method:
1).
Fry
the mince with chopped Onion, Mushrooms and Garlic if desired. Drain
off any oil and add about 2c of water + gravy powder (about 2 tablespoons)
to the pan.
2).
Chop up whatever vegetables you want and put
them into the pan and the rice. Add any herbs and spices you wish.
Add about a tablespoon of Tomato Paste.
3).
Simmer this until the rice is soft (about
20 mins). If it looks a bit sloppy, mix 1 tablespoon of corn flour
with a little water and add this to the mixture, this will thicken it.
Then pour into a dish. I use a rectangular lasagne dish.
4).
Rinse the pan and put your potatoes (peeled
and chopped) in to boil. Place bread slices over the top of the mince
mixture (you can have gaps) and then top with grated cheese.
5).
When soft, mash the potatoeswith some salt
and pepper, and spread this over the mince/cheese mix. Using a fork,
make some swirly patterns on the top of the potato, spray with a little
spray oil (or brush with melted butter), sprinkle some parmesan cheese
on top and bake in the oven until the potato goes golden brown.
Serve
this with vegetables or chips... or eat it on its own...
