...Cinnamon,
Cardamon and Sultana Scones...

A
recipe I was experimenting with to make something like a biscuit that had
no egg in it (I have a friend who can't have egg). It actually turned
out nice. I cut mine out into small star shapes, and my self raising
flour was past its used-by date, so they didn't rise much. I think
I have discovered that you need fresh flour and a larger scone for it to
rise a lot.
Serves:
makes
about 20 I think (depends entirely on the size of your scones.)
Ingredients:
2 cups
self raising flour
1/2 teaspoon
salt (ok, the recipe I use for the basic scone dough uses it, but I leave
it out)
1/8c
butter
3/4c
milk
1 teaspoon
cinnamon
1 teaspoon
(finely) ground cardamon
handful
of sultanas (could use raisins)
Oven
Temp:
Hot 450F
(my oven is so old its in farenheight! so I don't have to convert it)
Method:
1).
Sieve
(hehe I never do) the dry stuff into a bowl and rub in the butter until
it does the breadcrumb thing.
2).
Add
the sultanas and milk... mix into a dough
3).
Roll
out onto a floured surface and use a sharp cookie cutter to cut out your
desired shapes. Put on a greased baking tray. brush the tops
with milk.
4).
Bake
for 15 mins.
